Mac & Cheese

 

Ingredients:

1 Garlic Clove, Minced

1 Carrot, Finely Diced

1 Red Onion, Finely Diced

100g Yellow Squash, Chopped

½ Tsp Dijon Mustard

250mL Made By Cow Cold Pressed Raw Milk

1 Egg Yoke

1 Tbsp Coconut Oil

2 Cauliflowers

3 Tbsp Water

Grated Macadamias

Method:

Step 1: Heat frypan and sauté garlic. Then add carrot, red onion and yellow squash and cook for a few minutes until softened.

Step 2: Add the mustard and Made By Cow Cold Pressed Raw Milk. Bring to the boil, then simmer until the milk starts to reduce and the sauce starts to thicken.

Step 3: While the sauce cooks, heat a second frypan and melt some coconut oil, then add the cauliflower and stir until it starts to brown. Then add and water, bring to the boil and simmer with a lid on until the cauliflower is cooked through.

Step 4: When the vegetables have reduced, allow to cool then pour into a food processor, add the egg yolk and blend until combined.

Step 5: When the cauliflower has cooked, spread onto a serving plate, pour over the sauce and sprinkle with grated macadamias.
