Cream-on-top (or affectionally called crème de la crème here at Made By Cow) is not something you see often in milk these days…but those that grew up with milk from the milkman will remember it well. It’s a sign that the milk is in its most natural form; un-touched and un-messed with.
The cream-on-top develops because our milk is not homogenised (a heated process that melts the fat in the milk). Some like to scoop the cream out and eat it straight, others like to mix it back through the milk, how you use cream is up to you!
